So, I’ve got a super important question for you. Have you ever had agua de tamarindo? It’s a drink made of tamarind pods, sugar, and water. It’s aaaaaaamazing, as I’m sure those of you who have had it know. You might even be familiar with the tamarindo Jarrito. Even though the Jarrito is carbonated, this agua has a similar flavor. It’s tangy, sweet, earthy, and so refreshing.
And because I’m always trying to come up with something you guys have never tried before, of course I had to tweak agua de tamarindo just a tiny bit. I added peaches! And let me tell you, I never thought tamarind agua could get any better, but the addition of peach is just like, wow, man.
Let’s talk flavor profile. Imagine a juicy, sweet, slightly tart peach. Now imagine it a little bit more sour. And you know the smell when it rains after it’s been dry for a long time? Turn that into a flavor and throw that in with the peach– that’s what this agua tastes like.
Just for a moment, let’s say that you’ve never dealt with fresh tamarind before. That’s totally cool because I’ve got some info for you that I’m happy to share.
1) Where to Find Tamarind – You can find tamarind in Mexican stores, of course, but they can also be found in the Mexican aisle of some big box stores. They are usually in a plastic package like this (only imagine tamarind instead of chiles).
2) What It Tastes Like – As I touched on before, tamarind is earthy, sour, and a little sweet. I’m really into sour stuff (please give me all of your Sour Patch Kids), so I absolutely love it. Even if like things a little less sour, you can add more sugar to suit your taste.
3) How to Clean It – Once you get the tamarind, remove the outer shell. Inside will be a sticky coating that covers the seeds of the tamarind. This is the good stuff and you can eat it just like that. Pull out any of the stringy veins, which can usually be traced back to the stem that attached it to the plant. Check out the photo of the seeds and veins below. As a side note, the seeds are used to make jewelry– they’re super purty.
4) How Tamarind Makes a Drink – That sticky seed coating inside the shell is simply simmered, squished up, and strained. Easy peasy.

- 4 ounces fresh tamarind pods, outer shell and stringy veins removed
- 4 cups cold water
- ⅓ – ½ cup sugar
- 1 large peach, washed and pit removed
- ice for serving
- Place the tamarind pods in a very large pot with 1 cup of water. Place over high heat and bring to a boil. Reduce to a simmer and cook for 5 minutes, breaking the tamarind pods up with a spoon as you go.
- Remove the pot from heat and add the remaining 5 cups of water. This will bring it to a temperature lower so that it is no longer too hot for your hands. Break up the tamarind pieces in the pot with your hands. Squeeze and knead the solids to get as much flavor as you can out of the tamarind.
- Strain the mixture into a blender and add sugar to taste and the peach. Blend on a high speed for 3 minutes. Taste and add more water or sugar, if desired. Serve over ice and enjoy!
