I absolutely love holidays. This recipe is inspired by the essence of St. Patrick’s day, one of my favorite holidays. Any excuse to whip up something special and festive to eat is a win for me. (I definitely plan on making some Lucky Charms Treats, like Rice Crispy Treats only St. Patrick’s Day inspired.) So that got me thinking about the foods we think of when we think Irish here in the US. Green beer– corned beef and cabbage– how about some Irish Cream? Now you’re talking!
It’s truly empowering to me that you can scour the internet and find recipes to make just about anything homemade these days, even your very own Irish Cream. Goodbye, huge price tag (if you’ve already got whiskey sitting around). Goodbye ingredients I can’t identify. Hello homemade!
And the best part? The fact that you can get creative and make your own Irish Cream flavor. Oh my, yes. Dulce de Leche.
I don’t know many people who don’t want to polish off the whole can after opening this ridiculously addictive can of creamy bliss. Dulce de leche is essentially sweetened condensed milk that has been cooked until it turns into a rick, thick caramel. I want to bathe in this. It’s a main stay in Mexican sweets and I love any chance I can get to try a bit of Mexican fusion.
Even though I shouldn’t have been, I was kind of amazed at how delicious this liqueur is. I found myself licking my fingers, licking the bowl, licking the computer screen while looking at the photos. Well, maybe not that last part– maybe. I’ll let you decide for yourself. Tony and I always test our recipes and when family around, which is almost all the time, we ask for opinions. After trying this, we got a few returning customers. “Hey, do you still have some of that Dulce de Leche Irish Cream?” Why surely! Sharing is definitely caring.
Another thing that I love about this recipe is that it has so many applications. Pour it over ice cream, mix it into coffee, a plethora of mixed drinks, spoon it over flan. Your imagination is the limit. Plus, it would probably make a great gift. A bottle of homemade liqueur for a St. Patrick’s Day present? Yes, please!
Did I mention how easy this is to prepare? It’s as easy as 1..2… that’s it. Measure, blend, and you’re done. I love it.

- 2 tablespoons milk (whole or 2% work best)
- 1 cup heavy cream
- 1 (13.4-ounce) can dulce de leche
- 6 ounces (¾ cup) Irish whiskey
- ¾ teaspoon instant coffee granules
- 2 tablespoons chocolate syrup
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract
- Place all of the ingredients in a blender and blend on high for 30 seconds. Scrape the sides of the blender and process for 10 seconds more.
- Chill in the refrigerator or enjoy right away over ice. Give a gentle shake before serving.
